This single-producer coffee comes from Dinkalem Ademe’s farm near the village of Checho in Ethiopia’s historic Keffa region, widely recognized as the birthplace of Arabica coffee. Grown beneath the forest canopy at elevations of 1,800 to 2,000 meters, the coffee matures slowly, developing remarkable sweetness and complexity.
Dinkalem’s farm encompasses approximately 400 hectares, yet only about 40 hectares are planted with coffee. Most of the property remains preserved as native forest, protecting biodiversity and the natural ecosystem surrounding the farm.
After harvest, the cherries are naturally processed with minimal water, intensifying the coffee’s fruit character and sweetness.

Dinkalem’s vision extends beyond his own farm. His growing outgrower program is designed to create additional opportunities for neighboring producers and families while preserving local farming knowledge.

Approximately 90% of the farm remains native forest. Coffee grows within this biodiverse ecosystem beneath natural shade, while gradual replanting replaces aging coffee trees without clear-cutting established areas.
Natural processing also requires significantly less water than traditional washed processing methods.

Only 707 bags were produced from this harvest. We committed to purchasing 10% of the farm’s total production, deepening our relationship with Dinkalem while securing a meaningful share of this limited coffee.
